This recipe for Devils Food cake contains pureed beets.
Red Devils Cake (with cooked beets)
Ingredients

1 3/4 cups all purpose flour
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups sugar
- 1 cup oil
- 3 eggs
- 1 1/2 cups pureed cooked beets
- 2 ounces unsweetened chocolate, melted and cooled
- 1 teaspoon vanilla
Procedure

Preheat oven to 350 degrees F. Grease and flour 2 9" cake pans.
- Sift flour, baking soda and salt. Beat the sugar, oil and eggs for 2 minutes, then add in the beets, melted chocolate and vanilla; beat well. Gradually add in the dry ingredients. Pour batter into prepared pans and bake for 20 to 25 minutes or until cake tests done. Let rest in pans for 10 minutes before turning out onto cooling rack.
