Soft sheet sponge cake with dried apricots Yields 4 1/2 full sheet pans.
Preheat oven to 400 degrees F. Line full sheet pans with parchment paper.
Sift the first 3 ingredients together .
Add a little of the sifted dry ingredients with the dried apricots to prevent lumping.
Whip the egg whites and the granulated sugar together to make a firm meringue. Add in yolks. Next, add in dry ingredients, and then the apricots.
Scale 2# 12 oz. for each full sheet pan; yields 4 1/2 trays.
